Leek and potato soup

As usual, adjust quantities to taste as I estimate what I normally put in

Ingredients

  • 2 medium potatoes
  • 2 large leeks
  • 2 cloves garlic
  • 1 pint veggie stock or water and stock cube
  1. Peel and chop the potatoes into small cubes (about 1cm cubed)
  2. Trim leeks, and slice the top 2/3 of each into chunks
  3. Gently fry 2/3 of the potato cubes, garlic and leek tops in a pan preheated with oil, until softened

Carrot and Corriander soup

Like the rest of my recipes, most of the amounts etc are estimates as I make up most things as I go along and they're rarely the same twice

Ingredients:

  • 1 medium onion
  • 4-5 medium carrots
  • 2 cloves garlic, finely chopped or crushed
  • 1 tsp coriander seeds, crushed (or similar quantity of ground coriander
  • Good handful of chopped fresh coriander
  • salt and pepper to taste
  • Veggie stock or cube
  • creme fraiche or cream to taste
  1. Chop onion, garlic and carrots

When you see stories like this (bbc news) you have to wonder quite how the researchers managed to get funding.

One Year as a Limited Company

As of earlier this month, Pale Purple reached its one year anniversary as a limited company.
While this a wonderful and very cool thing, it also has plenty of implications for me. The most worrying is the massive amount of paperwork that is very soon going to be hitting me over the head, starting now.

It's also led me to think about the massive wadge of tax we shall owe. VAT is one thing, although that's not too bad, as we at least get to keep some of that. In some ways its helpful to the cash flow to be able to keep hold of some of the government's money for them for a while. What bothers me is the nasty corporation tax we're going to have to pay in the near future. 19% of our lovely profits, the ones we worked so hard for. Of course its better than paying ourselves through the payroll, as that would be much more expensive, but it does require more discipline to budget and make sure we've got enough to pay our tax at the end of the year.
